Note: Per Allan Lacer and common sense when you hone a hollow ground skew you ride both edges of grind arc and that way there will not be any micro bevel on the cutting edge where as a flat grind can only be honed with a micro bevel. The micro bevel will affect the quality and the control of the cut.

I don't hollow grind chisels and gouges for any reason other than to reduce the width of the honing bevel. If I had a flat honing disc or belt sander to produce a primary bevel quickly, as long as it didn't leave deep scratches at the cutting edge, I'd probably use that, especially in the case of gouges.

When I sharpen knives, I usually grind down the bevel a little, so the resulting edge geometry will be the same as before, but I don't think I can do that with a hollowgrind without losing the advantages of a hollow grind because it will change the grind near the edge to a flat grind.

I have considered a wedge, using my filling jig, but nothing really beats a hollow grind for honing a comfortable edge to shave with. Problem is, I don't have much money to invest further into these knives so a new belt grinder would be a little out of my range. Although I am pretty handy.

I would add that the hollow grind will disappear after a couple of honings so you will end up with a flat surface anyway and the back edge can be rounded over as well to assist the cutting action. I hollow grind because the wheel on my grinder is round. An edge is never put to the grinder unless it has some damage to the edge that honing won't fix, or the profile needs changing. I always use microbevels, whether with a guide, or by hand.
